This Dexter-Russell 10463 Oyster Knife is an American favorite. The Boston Pattern is very versatile. Its long narrow blade can be used to shuck any type or size of oyster.  Its pear shaped handle makes it comfortable to grip and hold. Any shucking method can be used with this knife, except side-knife method. The forward bulge in the handle serves as a stabilizing thumb rest.

The narrow body behind it enhances a good grip for the rest of the fingers. The rear of the handle is bulged again for good support in the base of the palm. It has a slightly convex blade. Also the blade is not as sharp. And finally it narrows toward the flat rounded tip.

Shucking oysters are much more pleasurable when you use an oyster knife with the right features. Shucking is the action of prying open oysters and separating their meat from the shell. The blade of an oyster knife is beveled yet dull. This means the delicate muscle of the oyster will not become damaged when shucking.

At the end of the blade end, the pointed or rounded tip is curved slightly upward. This helps to unhinge the oyster and slice through its muscle. It is highly recommended you use the knife type designed for the right shell.

John Russell established The John Russell Company in Greenfield, MA in 1834. He built the factory on the banks of the Green River where he used the water to provide power. He first produced chisels and ax heads. Additionally as the company grew, he began to produce large quantities of high quality hunting knives.

Finally, a merger occurred in 1933. Thus the two companies became the Russell Harrington Cutlery Company. Finally in 2001, the company changed its name to Dexter-Russell, Inc. to reflect its history.
