This Dexter-Russell 15271 Paring Knife, cook’s style, has a full tang with beech wood handle and high carbon steel blade, which is easy to sharpen. However, because this blade is not stainless steel, it can rust.

It is best to wash and dry high carbon steel blades immediately after use as they can rust.  Stains may occur on High carbon steel blades.  will stain as they are used. Steel wool can be used on these blades. It is easier to sharpen and hone High carbon steel blades.

The beech wood handle is tightly secured to the blade tang with compression rivets. The blade edge is hand-ground and honed to ultimate sharpness. Dexter Russell 15271 Paring Knife 3-1/4″ was Dexter Russell Model # 2332.

Henry Harrington established The Harrington Cutlery Company in 1818. It was in Southbridge, Massachusetts. As a matter of fact, he was a New England craftsman and inventor.

John Russell established The John Russell Company in Greenfield , MA in 1834. He built the factory on the banks of the Green River where he used the water to provide power. He first produced chisels and ax heads. Additionally as the company grew, he began to produce large quantities of high quality hunting knives.

Finally, a merger occurred in 1933. Thus the two companies became the Russell Harrington Cutlery Company. Finally in 2001, the company changed its name to Dexter-Russell, Inc. to reflect its history.
