This Dexter-Russell 08020 Chef’s Chinese Knife or Vegetable Cleaver measures 8″ x 3-1/4″ and has a high carbon steel blade (not stainless) with hardwood handle. A brass pin secures the wood handle to the blade tang. The blade edge is hand-ground and honed to ultimate sharpness. This blade is excellent for chopping and slicing vegetables, herbs, and boneless meats. Please Note: Do not use this knife to chop bones.

This Dexter-Russell 08020 Chef’s Chinese Knife or Vegetable Cleaver features a high carbon steel blade. Therefore, gradual staining on the blade will occur. This staining will not hurt the blade. Great care should be used to remove all food residue. The blade should be thoroughly cleaned, and immediately dried to prevent rust from forming
