Global Knives were first designed in 1985. Industrial designer Komin Yamada was commissioned to create these kitchen knives. Global handcrafts these knives in Niigata, Japan.
The edge of any knife is very important. Furthermore, the edge on these knives is truly its innovative feature. Global sharpens the knife on both sides, just like Western style knives.
However, where Western knives are ground with a bevel, Global grinds the edge to an acute, steep angle. Oriental knives and swords are the inspiration for this longer edge. The straight edge results in a dramatically sharper knife which stays sharper longer. Balance is important too. Perfect balance provides optimal control.
In addition, the blades use molybdenum/vanadium stainless steel. In this case, ice tempering and hardening allows the steel to be brought to a Rockwell 56-58 degree of hardness. Of course, this means it can hold a taper-ground, razor sharp edge. Moreover, Global uses CROMOVA 18 steel in these knives.
Making the steel hard enough means the knives will retain their sharpness. At the same time, it is soft enough to sharpen with a whetstone. The high chromium content makes the knives resistance to rust and staining.
The slim Global design means a better mobility. Additionally, it is comfortable for the smaller hand. By welding the handle to the blade knife is totally seamless tool. The texturing on the handle provides a sure grip.
