The Dexter-Russell 10473 Oyster Knife has a 2-3/4″ inch stainless steel blade. The white handle is a Sani-Safe® handle. This high-impact white “Grip-Tex” polypropylene handle is slip-resistant. The handle is also safe and withstands high and low temperatures. The Dexter-Russell product number is S121PCP.
This knife is an American favorite. The New Haven Pattern has a short wide blade with a convex pointed tip. It is perfect for oysters on the half shell. It features a long pear shaped handle for the perfect shucking grip. This knife provides excellent leverage for opening the oysters especially when using the classic hinge method.
The convex tip tends to travel high inside the oyster, away from the tender meat. The tip helps to cleanly shuck the oyster meat
