This Global GTF-30 Cheese Knife for hard cheeses strong and rigid for cutting hard cheeses. The blade is 8 cm long. Additionally, the edge of blade has small serrations for added slicing ability, This cheese knife has a fork tip to pick up cheese chunks or cheese slices for easy, gracious serving.
Global knives were first designed in 1985. In fact, Global Knives commissioned Industrial Designer Komin Yamada to create the style of Global kitchen knives. Using only high quality materials, Global hand-crafts these knives in Niigata, Japan.
This is a forged knife. Forging makes the knife heavier and stronger. A forged knife will also hold its edge longer.
The edge of any knife is very important. Furthermore, the Global edge is truly its innovative feature. Both sides of the knife edge is sharpened, in the same way Western knives are sharpened. A bevel is used on Western knives. But, where Western knives are ground with a bevel, Global knives are ground to an acute, steep angle. Oriental knives and swords are the inspiration for this longer edge.
The straight edge results in a dramatically sharper knife which stays sharper longer. Balance is important too. Perfect balance provides optimal control. The hollow handle with sand inside helps achieve that perfect balance.
In addition, the blades use molybdenum/vanadium stainless steel. The degree of hardness on this knife is a Rockwell 56-58. Of course, this means it can hold a taper-ground, razor sharp edge. Moreover, Global uses CROMOVA 18 steel in these knives. Making the steel hard enough means the knives will retain their sharpness. The high chromium content make the knives resistance to rust and staining.
The slim Global design means a better mobility. additionally it is comfortable for the smaller hand. By welding the handle to the blade knife is totally seamless tool. The texturing on the handle provides a sure grip.
