This Wusthof 1040131317 Classic Santoku Knife has a black, triple-riveted handle. The blade measures 7″ (17 cm). It also has a hollow edge. The Santoku is the oriental version of the cook’s/chef’s knife, used for dicing, chopping, mincing, and quartering.

The offset handle keeps one’s knuckles from hitting the cutting surface. The hollow edge provides a very thin edge for a thinner, smoother slice.

Wusthof uses a single piece of chrome-molybdenum steel to forge the Wusthof 1040100120 Classic Cook’s Knife. Forging makes the metal harder so the knife stays sharp longer. This knife has a bolster (the thick metal section between the blade and the handle) which protects the fingers and gives the knife a solid, balanced feel and heft.

It also has a full tang. Specifically that means the forged metal extends to the end of the handle for maximum strength and balance.

Honing the Wusthof 1040100120 Classic Cook’s Knife twice and using laser to test the sharpness, Wusthof produces Wusthof 1040100120 Classic Cook’s Knife to be extremely sharp. Computer-controlled grinding and polishing procedures result in a precise tapering from bolster to tip and from back to edge.
