This WÜSTHOF 1040131314 Classic Santoku Knife Hollow Edge Knife has a black, triple-riveted handle. It has a blade with a hollow edge. It measures 5-1/2″ (15 cm) in length. The Santoku is the oriental version of the cook’s/chef’s knife, used for dicing, chopping, mincing, and quartering. The offset handle keeps one’s knuckles from hitting the cutting surface.

The hollow edge is NOT a serrated edge. The hollows create an air pocket which reduces drag on the blade. It also reduces food sticking to the blade. The hollow edge also allows one to get a thinner slice.
