The Norton NT85960 Three Stone Multi-Sharpener IM313 has 3 long stones mounted in a steel frame. These stones are then inside a reservoir base. A complete sharpening system for all applications. Longer stones yield more effective sharpening per stroke thus saving time.
Norton says: “Walk into any established commercial kitchen, and you will find one of these.” Each stone measures 11-1/2″x2-1/2″x1/2″. When one stone is being used, the other two are immersed in the oil bath. This makes them ready for use at the twist of a wrist. Well oiled stones are resistant to particle buildup.
One stone is coarse Crystolon and one is medium Crystolon, a silicon carbide abrasive for fast cutting and edge shaping. The third stone is India aluminum oxide abrasive, which gives a keen edge and finer quality finish. One pint of oil is included with the unit.
